How can very small companies that lack a HACCP-trained leader ensure compliance, especially when contracting consultants?
 
Outsourcing professional help with your HACCP plan is going to be essential if there is no suitably qualified member of staff to contribute.
As with a lot of 'purchases' it's always best to do your homework and look around at what is on offer and the costs involved.
Ask other businesses for recommendations, look at reviews and then decide.
